Is there any non polish ,non EU citizen doing residency in any field in poland? Is it possible for non EU citizens to get admissions for residency in polish Universities?

I don't frankly know about the immigration and hiring practices for physicians in Poland, so I will leave that part to someone who does... but the first question that springs to my mind is "How are your Polish language skills?"

That's a pretty steep task -- good luck!

Are you independently wealthy? Because residents in the former East Bloc are usually notoriously poorly paid... if they get paid at all. In many places, they actually charge tuition for specialist training, although I don't think that is the case in Poland. That is one reason that so many E-EU medical graduates head to W-EU for training, if they have the language skills.
