Gluten is a general name for the proteins found in wheat (durum, emmer, spelt, farina, farro, KAMUT® khorasan wheat and einkorn), rye, barley and triticale. Gluten helps foods maintain their shape, acting as a glue that holds food together. Gluten can be found in many types of foods, even ones that would not be expected. Gluten both nourishes plant embryos during germination and later affects the elasticity of dough, which in turn affects the chewiness of baked wheat products.
Many healthy and delicious foods are naturally gluten-free:

Beans, seeds and nuts in their natural, unprocessed form
    Fresh eggs
Fresh meats, fish and poultry (not breaded, batter-coated or marinated)
    Fruits and vegetables
    Most dairy products
