Besides the premed classes, rate (from 1 = "least useful" to 10 = "most useful") the following biology/chemistry classes in terms of their usefulness to preparing for the MCAT:
Cell Biology
Molecular Biology
Genetics
Biochemistry
Anatomy/ Physiology
Immunology
Developmental Biology
Environmental Science

Noit having taken all of these classes, let me speculate:
Cell Biology --1
Molecular Biology --6
Genetics --2
Biochemistry --3
Anatomy/ Physiology --4
Immunology --5
Developmental Biology --7
Environmental Science --8
Just a quick thought and by no means an exhaustive review.

The AAMC says that it is not necessary to take advanced science couses to do well on the mcat. A friend of mine scored 13 on the bio section without advanced coursework. Just know the basics cold.
That said, I have a feeling that some of the courses you listed would be helpful in med school. I mean, if the difficulty in med school is the volume of information, then knowing a lot of the information already seems like it would be helpful. But I would defer to current/old med school students on that one.

For the MCAT, none of those. Though a very basic understanding of physio and anatomy may help. Concentrate though on Physics and Organic Chem, that's the area that kills most people.
