Do medical schools care about how difficult your coursework has been?

For example, would they be more willing to accept someone who has already taken a ton of advanced science classes but with lower GPA over someone who has not but with higher GPA?

It depends on how much lower and how much higher.

A 3.8 in the humanities will almost always be looked favorably instead of like a 3.0 in say biochemistry.

Thats a tough question because programs are unpredictable. I know people with psch degrees who did minimum premed course work got 4.0 and got into med school with similar MCAT as myself and then there are those who did Biochem (mainly me) with a GPA of 3.6 in Honors college at my university (biochem gpa of 3.8) who did not get into med school in the US specifically in Texas. Go figure. This is just my personal experience. This is not to say that all schools dont weigh in the difference of coursework.
