I'm considering taking the "Human Parasitology" and "General Microbiology" courses at my undergrad university. Since neither are required for my bio degree, the only way i can see these classes being beneficial for me are for medical school preperation.
Hence, do either of these classes help with your med school course work, and do admissions counselors really value them?

TO be honest admissions counselors wont even care if you took micro and parsit. Can it help well it wont hurt. I am not saying you should take it but I dont think its going to hinder your abilities of becoming a good med student if you dont. What you need to learn med school teaches and well I would rather take some class that is interesting.
Things like research and publications as a undergrad are impressive as well as work experience asd EMS or paramedic.

Nimitt is right.
IMHO, there's not anything much more interesting than Parasitology. Made me want to avoid living in Africa, though. I had an epidemiologist prof, it was fun.
I had a blast in Microbiology in undergrad, too. Easy course in a lot of schools, can raise your science GPA.
What's your other choices, anyway? Some art class?
