Does the Cayman Dollar fluctuate, or is it always at $1.20 to the US Dollar?

The Cayman Islands dollar has a fixed exchange rate with the US dollar, generally CI$1.00=US$1.25, or CI$0.80=US$1.00. Exchange rate will vary locally, from 0.8 to 0.84, depending on where you exchange.

Today I looked up the conversion and it said $1.00 KYD=$1.20USD...is it possible that the chamber of commerce page is outdated? THis actually makes a big difference if you are paying for something in US dollars that is more than a couple of hundred dollars.

No, it's right. $1 CI = $1.25 US and $1 US = $.80 CI.
Most place have prices in CI. You go to pay with a US credit card (or cash) and they just multiply the CI total by 1.25...
